Tiroler Grostl- apres ski speck potatoes and eggs

2- 4 large potatoes

30g smoked streaky bacon chopped

Handful fresh chopped chives

2-4 eggs depending how many servings

1onion finely chopped

Salt pepper

A couple of pinches caraway seeds

Butter & a little oil for frying

Chop the potatoes into halves then slice into medallions and boil til nearly tender in boiling water. Add a knob of butter to a pan a dash of oil and season and fry the potatoes til golden caramelised and slightly crispy. In a separate pan fry the onion til translucent add the bacon and season with a little salt and caraway then til slightly caramelised. In a separate pan fry the eggs leaving the yolks runny. Mix the potatoes with the bacon and onions lay 1or 2 eggs on top sprinkle with fresh chives and serve with a fresh green salad
