Healthy Granola

300g porridge oats

150g mixed nuts flakes almonds walnuts pecans - (whatever you have)

250g mixed seeds chia hemp poppy pumpkin sesame etc

3tbs sunflower oil

A handful chopped dates or cranberries ( or whatever you fancy !)

1tsp vanilla extract

2tbs maple syrup

1tsp heaped crunchy peanut butter

1dessert spoon runny honey

Generous pinch of salt


Put all ingredients except the fruit, in a bowl and stir well to make sure all is coated well.

Tip onto a lined baking tray and bake @169c 10-15 mins. Add the dried fruit stir and return to the oven a further 10 mins or so watching that the granola doesn't overcolour . Cool then store in a kilner jar for up to a month .
