300g plain flour
180g caster sugar
50g sifted cocoa powder
1 tsp baking soda
1/2 tsp baking powder
A pinch of salt
2 tsp vanilla extract ( or 1 of vanilla & 1 of coffee extract )
100g chocolate chips
250 ml water
150ml mayonnaise
For the icing :
100g milk chocolate melted
200g softened butter
375g icing sugar
4tbs sifted cocoa powder
2tbs milk
A pinch of salt
Sprinkles to decorate
In a bowl sift the flour cocoa powder then add the caster sugar the baking powder and soda and the salt. Slowly add in the water and the mayo mixing as you go add the extracts until the mix is glossy. Line your baking tin with muffin cases. Before you pour in the mix stir in the chocolate chips then fill each case 2/3rd full ( makes 8- 12 depending on case size. Bake in preheated oven @180c 20-25 mins until they spring back when touched or when skewer comes out clean from the middle . Allow to cool on a rack.
To make the frosting beat the butter and icing sugar together add the cocoa powder and a pinch of salt then the melted cooled chocolate and loosen with the milk. Use a piping bag and sprinkles to decorate.
